We cooked my mother-in-law’s stew ten times before she would let us present this to you. Be assured this stew is under continuous quality control but she allowed us to make a couple of adjustments to make it ours. “What’s the secret ingredient?”, more wine.
We marinate the beef in red wine, seer it on the outside then let cook in a mixture of tomato sauce, carrots, onions, potatoes and celery along with various herbs and spices for hours..

Our stew is based on recipes developed in Brunswick, GA, a charming little port town where easy living is a big deal. This stew has chicken, pork, fire roasted tomatoes, corn, butter beans and is served over potatoes. We know you folks in Virginia also claim this stew as your own, but this version is inspired by our kinfolk in South Georgia. We’ll work on a Virginia version for all of us, in the future.

The epitome of South Carolina Low Country cooking. Some may call this a pilau, just don’t on the South Carolina coast.
I watch over a plump whole chicken as it boils for over an hour. I add sausages and rice cooked how rice is supposed to be cooked. When you get it, add your favorite hot sauce and you have comfort in a bowl. Served over rice.

A little bit exotic, a little bit familiar, Country Captain is seasoned with history. An aromatic one-pot tomato based stew of chicken, curry, rum-soaked raisins and almond slivers served over rice.
