We don’t take sides in who makes the best Pork Green Chili: Colorado, or New Mexico, but this is our version. It’s a little sweet, mildly spicy but with lots of flavor.
We slow cook pork shoulder until if falls apart, add hatch green chilis, one jalapeño-minus the seeds, tomato sauce and various herbs and spices. Eat it as is or serve it over your fries, chips, or your eggs. A good green chili goes with everything and ours certainly does.
